做法:洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗净淮(huái )山和(hé )薏(yì )米。用清水把陈皮泡软,拍裂一小块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅(guō )上擦一遍(biàn ),放(fàng )两(liǎng )勺油(yóu ),待油六成热下(xià )鱼,煎至微黄(huáng )。煮沸(fèi )瓦(wǎ )煲里的(de )清水,放(fàng )入煎煮(zhǔ )好(hǎo )的鲫鱼(yú )和其他(tā )材料(liào ),武火煮沸,转中小(xiǎo )火(huǒ )煲一个半小时,下盐调味(wèi )即(jí )可品尝。
