做法:洗(xǐ )净(jìng )宰好(hǎo )鲫鱼,洗(xǐ )净淮山(shān )和薏米。用清(qīng )水(shuǐ )把陈皮泡软(ruǎn ),拍裂一小块(kuài )姜,热锅(guō ),用姜块在(zài )锅上(shàng )擦(cā )一遍,放两(liǎng )勺油(yóu ),待油六成热下鱼,煎(jiān )至(zhì )微(wēi )黄。煮沸(fèi )瓦煲里(lǐ )的清(qīng )水(shuǐ ),放入(rù )煎煮好的鲫鱼和(hé )其(qí )他材料(liào ),武火(huǒ )煮沸,转中(zhōng )小火煲一个半(bàn )小(xiǎo )时,下(xià )盐(yán )调味即可品尝。
