做法(fǎ ):春(chūn )笋切(qiē )成片后(hòu )加少许盐(yán )捞出(chū )后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放(fàng )入生(shēng )姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝(háo )油(yóu )翻炒(chǎo )均(jun1 )匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到(dào )水(shuǐ )快熬干的时候(hòu )加入盐,翻炒均匀(yún )稍(shāo )收(shōu )汁时盖上锅(guō )盖焖。
