做法(fǎ ):洗净(jìng )宰好鲫鱼,洗(xǐ )净(jìng )淮(huái )山和薏(yì )米。用清(qīng )水把陈皮泡软,拍(pāi )裂一小(xiǎo )块姜(jiāng ),热(rè )锅(guō ),用姜(jiāng )块(kuài )在锅上擦(cā )一遍,放两勺油,待油六成热(rè )下鱼,煎(jiān )至微(wēi )黄。煮(zhǔ )沸(fèi )瓦(wǎ )煲里的清(qīng )水,放入煎(jiān )煮好(hǎo )的鲫鱼(yú )和其他材料,武火煮沸,转中小火煲一(yī )个半(bàn )小时(shí ),下盐(yán )调味即可品尝。
