做(zuò )法:洗净(jìng )宰(zǎi )好鲫(jì )鱼,洗净(jìng )淮(huái )山和(hé )薏米。用(yòng )清(qīng )水把(bǎ )陈(chén )皮泡软,拍裂(liè )一(yī )小块(kuài )姜,热锅,用(yòng )姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成(chéng )热下(xià )鱼(yú ),煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和其(qí )他材料,武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火煲一个半小时(shí ),下盐调味(wèi )即可品(pǐn )尝。
