做法:洗(xǐ )净(jìng )宰好鲫鱼,洗净(jìng )淮山和薏米(mǐ )。用清(qīng )水把陈(chén )皮(pí )泡软(ruǎn ),拍裂一小块姜,热(rè )锅,用姜块(kuài )在锅上擦一遍,放两勺油,待油六成热下(xià )鱼(yú ),煎至微黄(huáng )。煮沸瓦煲里的清(qīng )水,放入(rù )煎煮好(hǎo )的鲫鱼(yú )和其(qí )他材料,武(wǔ )火煮(zhǔ )沸(fèi ),转中(zhōng )小火煲(bāo )一个(gè )半小时(shí ),下盐(yán )调(diào )味即(jí )可品(pǐn )尝。
